Spinach-Cheese Crepes With Bacon

Gentle reader, remember how I told you that I made spinach-cheese sauce … and that I would tell you what I did with it … and that it would involve bacon? Well, let this post go on the record as proof that I do not lie to you.

This crepe main dish is the latest episode in my ongoing quest to negate any and all health benefits involved in eating green vegetables. Yes, I actually took spinach and mushrooms and made them as cholesterolicious as a croque monsieur. Look, I had some bits of Swiss and some other sharp cheese that was getting crusty around the edges, so what else COULD I do? As the French, who invented crepes and cheesy sauces (I think) would say, je ne regrette rien. (That’s French for “sorry, not sorry.”)

I premade the sauce by cooking some bacon on medium until tender, not crispy, in a saucepot, and draining off the grease but leaving the wee brown bits. I then added half a stick of butter and once melted and bubbly, stirred in a chopped half shallot and 4 mushrooms sliced thin, with those slices then halved.

Spinach Triangles and the Circle of Life

Gentle readers, I know I’m not the first person to remark that 2016 sucked. We could list a million reasons, one of which I refuse to discuss because I’m still in denial. But let me just say to all of you who lamented Prince’s passing: That HAPPENED ON MY BIRTHDAY okay, so yeah THAT KIND OF SUCKED.

But wait, this year got way sadder. (Cue your Morrissey album of choice right now, seriously.) In November, I lost my beloved grandmother, Rose, a lifelong source of support, love, and spinach-feta triangles (as if there’s a difference).

From the time I was little, Mama inspired and encouraged me to express myself creatively via both writing and cooking, and breathed life into my imagination and appetite in all its forms. When I would stay overnight at her house, I got to watch the “Thriller” video every hour on MTV, drink Hawaiian Punch from a crystal goblet, eat Clams Casino off a TV tray, and bake cookies with her. Sometimes we also baked wee cakes in my Easy-Bake Oven. Had the phrase “like a boss” existed when I was a 7-year-old girl, I would have used it whenever I stayed with my grandmother.

To this day, my mother remains resentful of the fact that when she came to pick me up after my visits with Mama, I would run and hide so she couldn’t get me to leave and return to our non-cable-subscribing, high-fructose-corn-syrup-based-beverage-shunning home. In retrospect, I get why Mom felt dissed, seeing as how she was raising me and all. Can you blame me, though, gentle readers?

After passing peacefully at 89, surrounded by loved ones and loved by countless others, Mama lives on through years of memories and life lessons—and through her recipes.

I recently made these spinach triangles from her handwritten recipe, interpreted below. They freeze great; just under-bake them a little if you plan to reheat, as per the above picture.

Breakfast for 4!

hello readers, happy july!

In celebration of this great month and this great holiday (holla 4 days off in a row!) I have a bevvy of beautiful ladies hanging out. My sister is in town, her friend Kelly is in town, and Tamah came over to hang. With a morning hangout coming, I was racking my brain over what to put on the table. We couldn't go out to eat, as I had a roof guy coming over to check out the situation up there, and August coming to drop over her keys so i can do some kitty-sitting this weekend, hence the home hang-out time. I didn't have a ton in my fridge, but I did have eggs, I had some greens from my CSA, and I had a couple of tomatos. I was going to start from there.

Chicken Curry With Baby Spinach


After a (gloriously) red-meat-filled Memorial Day, I thought we should have a light Tuesday supper (especially since it was 85 degrees and muggy out), and opted for an extremely simplified take on chicken curry with baby spinach and tomatoes, served over rice with green peas.

This dish is quick, easy, and healthier than most things I make. It serves two, and you might have enough left over for one person’s lunch.
